The Holy Trinity of Genovese Street Food

1. Focaccia

It's not bread. It's a flat, oily, salty masterpiece.

  • Where: Every bakery (Panificio). Look for Panificio Claretta or Focacceria Mario (Via San Vincenzo).
  • Rule: Dip it in your cappuccino at breakfast. Seriously.

2. Pesto

Basil, pine nuts, garlic, parmesan, pecorino, olive oil.

  • Dish: Trofie al Pesto.
  • Stop: Near De Ferrari, try Roberto in Via San Vincenzo for take-away jars.

3. Farinata

A thin, wood-fired chickpea tart.

  • Where: Sa Pesta in Via dei Giustiniani (Old Town). It's a time capsule.

Fried Fish

At the port (Caricamento stop), look for the "Cartoccio" (paper cone) of fried anchovies and squid at Antica Friggitoria Carega.
